Recipe Ingredients for Chicken Quesadillas

2 pound skinless, boneless chicken breast, cubed
8 oz low fat cheddar
1/2 cup Salsa
8 flour tortillas (8-inch)
1 red pepper
3 green onions
2 roma tomatoes
4 tablespoons low fat sour cream

Recipe Directions for Chicken Quesadillas

  1. Pre cook chicken and cut into bite size pieces. Set aside.

  2. Heat a non-stick frying pan over medium heat.

  3. Place one tortilla in the pan, and top with 1/8 of all ingredients. (Cheese, chicken, peppers, onions, tomatoes)

  4. Cover with another tortilla.

  5. After 5 minutes place a plate over the top of the stack. Keeping your hand over the plate, flip the pan over, so you end up holding the plate with the browned side of the quesadilla in your hand.

  6. Slide the quesadilla back into the pan and brown the top side for 3-5 minutes.

  7. Remove from pan and cut into pieces.

  8. One whole quesadilla equals two servings in this recipe.
