Chicken Quesadilla Recipe

Whole chicken quesadilla, less than 500 calories with salsa!

Recipe Ingredients for Chicken Quesadilla

1 white flour tortilla, 9 inch
3 oz. boneless skinless chicken breast, boiled
1/4 tsp. taco seasoning mix
1/2 cup cheese, shredded
1/8 cup salsa

Recipe Directions for Chicken Quesadilla

  1. In measuring cup, measure 1 3/4 cups of water. Then add taco seasoning mix. (I usually use one packet per 2 chicken breasts I'm going to cook.) Mix well. Then, in crockpot, place raw chicken breasts (2 breasts makes 5-6 servings). Pour seasoning mixture over chicken, then add additional cold water to cover chicken. Replace lid and cook on low for 8-10 hours. Remove from crockpot, and shred chicken with a fork. Ladle some of the water from the crockpot over the chicken to keep from drying out.

  2. In skillet, place one tortilla. Turn on medium heat. Turn tortilla over when first side is slightly browned. Then, over half of the tortilla, sprinkle half the cheese. Then add 3 oz. of shredded chicken. Top with remaining cheese and then fold tortilla in half over the top, forming quesadilla. Turn entire quesadilla over once as cheese begins to melt. Remove from pan, slice with pizza wheel and serve with salsa on the side (and sour cream if you like it). YUM!!! :o)
