Chicken Quesadilla with Tomato and Cilantro

Recipe Ingredients for Chicken Quesadilla

1 chicken breast, grilled
2 tbsp cilantro
2 medium tomatoes
2 tbsp green onions
1 cup cheddar cheese
4 flour tortillas
1 tbsp salsa
1 tbsp sour cream

Recipe Directions for Chicken Quesadilla

  1. Grill Chicken breast and slice in strips or slice in strips and pan fry.

  2. Set heat to medium

  3. Add cubes to pan and toss with green onions and cilantro. Season with Salt and pepper if desired. Blanch pan and spray with oil, place tortilla shell in pan and layer with chicken, cheddar cheese and sliced tomatoes, and other tortilla shell. Flip when tortilla is browned on one side and flip (about 3 minutes). Brown other side (1 1/2 min)

  4. Cut tortilla into 4ths or 6ths and serve with a side of salsa and sour cream.
