Chicken, tomatoes, olives and basil in a rich broth.

Recipe Ingredients for Chicken Provencal

15 oz stewed tomatoes
1 3/10 lbs chicken breasts
1/4 cup all-purpose flour
4 tbsp grapeseed oil
2 tsp minced garlic
1 anchovies (mashed to paste, or 1 tsp paste from tube)
1 1/4 cup chicken broth
14 kalamata olives
1 tbsp basil

Recipe Directions for Chicken Provencal

  1. rinse and slice olives, drain and dice tomatoes, and chop basil into ribbons.

  2. dry, salt and dredge chicken in flour.

  3. heat 1 tbsp oil in heavy pan and fry chicken until brown, turning only once. Set aside and keep warm under foil.

  4. Let pan cool. Add 1 tbsp oil, garlic and anchovy paste and cook about 30 seconds. Add 1/4 cup broth and deglaze pan. Add remainder of broth, tomatoes and olives.

  5. Boil until thickened, about 10 mins, and add chicken back to pan. Simmer until chicken is cooked through and sauce is thickened. Serve over rice or whole wheat pasta.
