Chicken Provencal Recipe

Chicken and vegetables cooked in a skillet, adapted from Mark Bittman, How to Cook Everything. Use Nicoise or other good black olives. Canned tomatoes are fine. Add any herbs such as thyme, oregano, basil and bay leaf when you add the water or stock.

Recipe Ingredients for Chicken Provencal

2 T olive oil
4 lb chicken, cut in pieces
2 onion, chopped
1 t garlic, minced
1 oz anchovies, chopped
14 oz tomatoes
1/2 c olives, sliced
1/2 c flour
1 T salt
1 T pepper
1 c water

Recipe Directions for Chicken Provencal

  1. Heat the olive oil in a large skillet.

  2. Put the flour in a plastic bag with the salt & pepper and shake to mix. Drop each piece of chicken into the bag separately and coat.

  3. Add the coated chicken pieces to the hot oil and brown on both sides. Remove chicken from pan and set aside to keep warm

  4. Saute the onions, anchovies, and garlic in the hot oil. Add canned tomatoes, olives, and water or stock, and add chicken.

  5. Bring to a boil, cover, reduce heat and simmer 20 minutes until chicken is done and flavors are blended.

  6. Serve with rice, potatoes or pasta, garlic bread and salad if desired.
