My Venezuelan girl friend used to cook this for us, I had to ask her for the recipe, it's delicious!! However, I added a jalapeno for spiciness! You may serve it with rice or pasta.

Recipe Ingredients for Chicken with potatoes in tomato pepper onion sauce

2 breasts of chicken, cut in pieces
1/2 medium onion
1/2 green pepper
1/2 jalapeno pepper
1 large tomato
2 tbsp cilantro, chopped
2 tsp chicken bouillon powder
1 tsp salt
1 tsp garlic powder
1 tsp black pepper
2 cups water
1 1/2 cup potatoes, cut in cubes
1 1/2 cups cauliflower florets
1 tsp olive oil

Recipe Directions for Chicken with potatoes in tomato pepper onion sauce

  1. Cut onion, green pepper, tomato and jalapeno pepper in chunks, add the chicken bouillon with half a cup of water and put in a blender until smooth and put to the side

  2. Cut chicken and season with salt and pepper

  3. Put oil in a pot and once it shimmers, add chicken until all the outside parts are white

  4. Add the tomato onion pepper sauce, remainder water and the rest of salt, pepper and onion powder

  5. Add potatoes and cauliflower florets and let it simmer

  6. Cook until all vegetables are tender
