Recipe Ingredients for Chicken, Potato & Peas w Coconut-Curry Sauce

1 lb chicken, breast, meat only
1/2 c onion
1 tbs ginger root, minced
2 tsp jalapeno, minced (pith & seeds removed)
1 tbs curry powder
1 c low-sodium chicken broth
1 1/2 c diced potato (red or yellow)
5 oz 1% milk
1/4 tsp coconut extract
1 c peas, frozen
2 tbs chopped cilantro

Recipe Directions for Chicken, Potato & Peas w Coconut-Curry Sauce

  1. Cut chicken into strips.

  2. Heat skillet, spray, then cook chicken to barely done -1-2 minutes per side. Reserve, covered, keep warm.

  3. Return skillet to medium heat, re-spraying if necessary. Saute onion, ginger & jalapeno until soft, stirring steadily.

  4. Add curry, saute for 30 seconds. Add broth, deglaze pan. Add potato - salt & pepper to taste. Simmer until potato is tender, 7-8 minutes.

  5. Add coconut milk and peas, simmer until sauce thickens slightly, 4-5 minutes. Taste and adjust seasoning as needed.

  6. Stir in the reserved chicken and juices. Garnish with cilantro. Serve with rice if desired.
