Chicken and Potato Broth Recipe

Chicken and Potato broth, good for a light starter for lunch or dinner, or in my case, for a hearty breakfast.

Recipe Ingredients for Chicken and Potato broth

1 quart water
1 teaspoon salt
1 teaspoon chicken bouillon
3 small potatoes
2 green onions, chopped
1 tablespoon yellow onion, chopped
1/2 cup cilantro, finely chopped
1/4 pound chicken
2 eggs

Recipe Directions for Chicken and Potato broth

  1. In a saucepan put the water, salt, bouillon and chicken. Bring to a boil, then reduce heat to medium high.

  2. While the water is warming, peel the potatoes and slice them.

  3. Once the water is boiling, put the potatoes and the yellow onion in the water.

  4. Check on the potatoes and when they are starting to soften, bring the heat down to a simmer.

  5. Add the two eggs and mix them in the water. I usually leave the yolks intact and only divide them when ready to serve.

  6. If you added chicken (my original recipe is with chicken carcass pieces instead of chicken parts), this is the time to pull it out, let it cool down a bit and shred it back into the broth.

  7. Just before serving, add the chopped green onions.

  8. Put the cilantro on the side, as an optional garnish (around here my wife and me will do with most of it while the kids only do very little of it).

  9. Serve warm, as a starter. (Around my house we have this for breakfast).
