Yummy casserole for an easy dinner

Recipe Ingredients for Chicken & Potato Bake

6 1/2 oz zucchini, diced
1 tbsp olive oil
1 cup onion, chopped
2 cups chicken, cooked and diced
2 cups potatoes, cooked and diced
1 cup fat-free cottage cheese
1 tbsp flour
1 cup skim milk
1/2 tsp salt
1/4 tsp pepper
1/2 c breadcrumbs

Recipe Directions for Chicken & Potato Bake

Heat oil in a heavy skillet and saute mushrooms and onions until tender and lightly browned. Stir in flour until dissolved. Gradually add milk, stirring and cooking until thickened. In a 1 1/2 quart lightly greased casserole, combine chicken, potatoes, cottage cheese and mushroom mixture along with the salt and pepper. Top with bread crumbs. Bake at 350 for 20-30 minutes or until hot and bubbly.
