from 300 under 300 calories Hungry Girl Cookbook (her calories in the recipe are at 119, but this was closest to the ingredients I used)

Recipe Ingredients for Chicken Pot Pockets

1 teaspoon cornstarch
10 3/4 ounce Soup, Cream Of Chicken
2 cups frozen mixed vegetables
12 ounces boneless chicken breast
12 egg roll wrappers

Recipe Directions for Chicken Pot Pockets

  1. preheat oven to 350 degrees

  2. mix cornstarch with 1 tsp water in a small bowl

  3. in a large bowl combine, cornstarch mixture with soup and mix

  4. add in veggies and chicken (which is cooked and finely chopped)

  5. season to taste with salt and pepper

  6. set aside

  7. on a large dry surface, lay out three egg roll wrappers

  8. set a small bowl of water, dip your finger into it and run it along the wrapper edges (repeat as needed); this helps to seal the wrappers

  9. place about 1/3 cup of filling on the bottom half of each wrapper, leaving a 1/2 inch border around

  10. fold top half of wrapper over, dab each border with water and fold each inward about 1/4 inch to lightly seal all sides

  11. line a baking sheet with foil and spray with non-stick spray

  12. put pockets on tray

  13. bake for 20 minutes at 350

  14. allow to cool for 5 minutes before serving
