Recipe Ingredients for Chicken Pot Pies

2 cups mashed potatoes
1/8 tsp salt
2 tbsp flour
2 tsp dried sage
1/4 tsp salt
1/4 tsp black pepper
8 oz chicken breast
1 1/4 cups water
1 1/2 cups frozen peas and carrots
1 cup mushrooms
1 1/2 cups cream of chicken soup

Recipe Directions for Chicken Pot Pies

  1. skip if using mashed potatoes as I did: Cut 4 (3-to-4-inch) circles out of dough; discard remaining dough. Place dough circles on a baking sheet coated with cooking spray. Lightly coat dough with cooking spray; sprinkle evenly with 1/8 teaspoon salt. Pierce top of dough with a fork. Bake dough at 425 for 8 minutes or until golden.

  2. Combine flour, sage, 1/4 teaspoon salt, and pepper in a zip-top plastic bag; add chicken. Seal bag, and toss to coat.

  3. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken mixture; cook 5 minutes, browning on all sides.

  4. Stir in water, scraping pan to loosen browned bits. Stir in vegetables, mushrooms, and soup; bring to a boil.

  5. Reduce heat, and cook 10 minutes. Spoon 3/4 cup chicken mixture into each of 4 (1-cup) ramekins or bowls; top each serving with 1 piecrust (or mashed potatoes).

  6. Note: when using pie crust as directed, it is not necessary to use oven-save bowls for the pies. I used small pyrex oven-save dishes and broiled the pies (watching very carefully) just until the potatoes had browned (since everything is already cooked)
