Recipe Ingredients for Chicken Pot Pie

1 1/2 lb Cooked Chicken
6 tbsp Butter
1/2 cup All Purpose Flour
1 1/2 cups Milk
2 cups Chicken Broth
1 medium Onion
3 medium Carrots
3/4 cup Frozen Peas
3 tbsp Parsley
2 tbsp Egg
8 Biscuits

Recipe Directions for Chicken Pot Pie

  1. In a large saucepan over medium-low heat, melt 4 tbsp butter.

  2. Add the flour and whisk until smooth. Cook, whisking constantly, for 1 minute.

  3. Remove the pan from the heat. Add 2 cups of chicken broth and whisk until smooth.

  4. Whisk in 1 cups of milk. Increase the heat and bring the mixture to a simmer, whisking constantly.

  5. Remove the pan from the heat, scrape the inside of the saucepan, and whisk vigorously to break up lumps.

  6. Return the pan to the heat and, whisking, bring to a simmer, and cook for 1 minute.

  7. Stir in the chicken, bring to a simmer, and cook for 1 minute.

  8. Remove from heat and season with salt, pepper, and nutmeg.

  9. Preheat the oven to 400F. Grease a 13x9 inch baking dish.

  10. Heat a large skillet, melt 2 tbsp butter over medium-high heat.

  11. Add the onion and carrots. Cook for 5 minutes, stirring often.

  12. Stir the vegetables into the creamed chicken. Add the peas and parsley.

  13. Pour the mixture into the baking dish.

  14. Place the biscuits over the mixture, overlapping if necessary.

  15. Brush the top with the beaten egg.

  16. Bake for about 20 minutes, until the sauce is bubbling and the topping is browned
