Warms you up on a cold winters day. Cook in pie pan or individual oven proof bowl. Try topping with puff pastry instead of pie crust.

Recipe Ingredients for Chicken Pot Pie

1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup unsalted butter
1/3 cup chopped onion
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth, reduce sodium
2/3 cup fat free milk
1 teaspoon basil, dry
1 teaspoon italian seasoning, dry
1 pie crusts

Recipe Directions for Chicken Pot Pie

  1. Preheat oven to 425 degrees F

  2. Combine chicken, carrots, peas, and celery in a saucepan. Cover with water & boil 15 minutes. Drain and set aside.

  3. Cook onions in butter until soft and translucent. Stir in flour, salt, pepper, celery seed and herbs. Stir in chicken broth and milk. Simmer on medium-low heat until thick. Remove from heat.

  4. Place the chicken mixture in pie pan. Pour chicken broth mixture over it. Cover top with pie crust, seal edges. Make small slits in the top to allow steam to escape.

  5. Cook for 30 to 35 minutes, or until pastry is golden and filling is bubbly. Cool for 10 minutes.
