Chicken Pot Pie with top crust only.

Recipe Ingredients for Chicken Pot Pie

1/2 lb skinless, boneless chicken breast, cubed
1/2 c sliced carrots
1/2 c peas
1/2 c celery
1 potato
3 T chopped onion
3 T flour
1/8 t black pepper
1 T butter
1 c low sodium chicken broth
1/3 c Unsweetened Vanilla Almond Milk
2 pie crusts

Recipe Directions for Chicken Pot Pie

  1. Preheat oven to 425 degrees.

  2. In a saucepan combine chicken, peas, celery and potato. Add water to cover and boil for 15 minutes,

  3. remove from heat and set aside.

  4. Saute onion in butter until translucent. Stir in flour, pepper and celery seed.

  5. Slowly stir in chicken broth and milk.

  6. Simmer over medium heat until thick, then remove from heat and set aside.

  7. Pour chicken mixture into bottom of greased 9X9 pan. Pour hot liquid over it and cover with crust. Slit the crust for steam escape.

  8. Bake for 30 to 35 minutes.

  9. Cool for 10 minutes before serving.
