Chicken pot pie with potatoes - large amount

Recipe Ingredients for Chicken Pot Pie

2 lbs chicken
1 tbsp extra virgin olive oil
2 cups Bisquick
8 tbsp butter
2/3 cup low fat milk
1 cup chicken broth
16 oz frozen vegetables
10 oz potatoes

Recipe Directions for Chicken Pot Pie

  1. Cook potatoes and chicken - same pan, separately

  2. In a large pot, melt 1/3 cup butter, then mix in 1/2 cup bisquick and pepper and thyme

  3. When the roux is thick (shortly), mix in the milk and chicken broth then raise the heat slightly

  4. Mix in the vegetables and chicken and transfer to a casserole dish

  5. For the topping, use 1.5 cups bisquick, 3 tbsp warm butter and 3 tbsp hot water - either mix and roll out or crumble on top

  6. Bake at 350 for about 30 minutes
