Chicken and mixed vegetables in a low calorie homemade pie crust.

Recipe Ingredients for Chicken Pot Pie

16 oz frozen mixed vegetables
1 chicken bouillon cube (Herb Ox)
1 cup chopped chicken
1/2 cup water
1 tbsp flour
2 cup all-purpose flour
8 tablespoons margarine (chilled)
2 teaspoons cider vinegar
6 teaspoons ice water

Recipe Directions for Chicken Pot Pie

  1. Pie Crust

  2. In a large bowl, combine flour, and salt. With two knives (or pastry cutter), cut in margerine until the mixture resembles coarse crumbs. Stir in the vinegar and then the water, 1 tablespoon at a time until the dough begins to form. Seperate dough into 2 disks. Wrap with plastic wrap and chill for at least one hour (best is chilled overnight).

  3. On a floured surface, roll out 1 disk of dough to a 13" circle.

  4. Fit dough into a 9" pie plate, pressing to fit letting excess crust hang over edge of pie plate.

  5. Prick the bottom with a fork.

  6. Filling

  7. Bring water, mixed vegetables, bouillon cube, and chicken in sauce pan to a boil.

  8. Mix flour and 1 tbsp liquid from vegetables and chicken in a cup to form a paste.

  9. Add flour paste to vegetables and chicken to thicken sauce.

  10. Fill pie crust with chicken and vegetable mixture.

  11. Roll out remaining disk of dough into a 13" circle.

  12. Cover pie pan with dough.

  13. Fold top layer of crust over bottom layer and crimp the edges of the crust to form lip on pie plate.

  14. Prick top of pie crust with fork to create air vents.

  15. Bake in oven at 355 degrees until crust is lightly browned (30-40 minutes).
