Creamy chicken pot pie with potatoes, carrots, peas, celery and onion.

Recipe Ingredients for Chicken Pot Pie

3 lb chicken breasts
1/2 tsp pepper
1 tsp salt
1 tbsp olive oil
2 stalks celery
1/2 red onion
1/3 cup flour
2 1/2 cups chicken stock
1/2 pint heavy cream
1 cup frozen peas
1/4 cup carrots
2 medium potatoes
2 cups flour
1/2 cup whole milk
3 tbsp shortening
1 egg
1 tbsp water

Recipe Directions for Chicken Pot Pie

Boil chicken in water with pepper and salt. While cooking chicken, chop onion and celery and saute in olive oil until onion is transparent. Stir in 1/3 cup flour. Stir in chicken stock. Slowly add in the heavy cream. Cut potatoes into bite size chunks and place in pan. Cut chicken into chunks and place over potatoes. Cut carrots and add to pan. Add peas. Pour cream mixture filling pan. Make cover by mixing flour, shortening and milk. Roll out and cut into squares. Place squares over filling. Whip egg with some water. Brush onto the squares. Bake at 375 for about 50 minutes. Pot pie should be brown and filling will be bubbly.
