Recipe Ingredients for Chicken Pot Pie

1 1/2 cups diced potatoes
1 cup diced carrots
1/2 teaspoon salt
1 tablespoon olive oil
1 1/2 cups boneless chicken breast halves, cubed
1 cup diced celery
1 cup chopped onion
2 teaspoon Cajun seasoning
3 tablespoons butter
1/3 cup all-purpose flour
2 cups chicken broth
1 tablespoon snipped chives
1 1/2 tablespoons chopped fresh parsley
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1 cup frozen peas, thawed
1 pie crust

Recipe Directions for Chicken Pot Pie

  1. cover chopped carrots and potatoes in water, with the salt. cover, bring to boil, and turn to low and simmer 8 min, or until just tender. set aside.

  2. steam the chicken breast and shred it.

  3. saute celery and onion in evoo, with cajun seasoning. add shredded chicken and blend. set aside.

  4. make a roux with flour and butter. when roux is finished, stir in chicken broth. add in herbs and cook until thickened. stir in thawed peas, celery, and onion.

  5. combine everything together in a baking pan. cover with pie crust. bake at 350 for 25-35 min.
