This pot pie is not healthy at all, but it is delicious. It's high calorie, high fat, and high sodium. Reserve this for a special treat.

Recipe Ingredients for Chicken Pot Pie

1 lb boneless, skinless chicken breast
3/4 cup sliced carrots
1/2 cup chopped celery
3/4 cup frozen peas
1 medium red potato
1/2 cup butter
1/2 cup flour
1/2 large onion
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/2 tsp celery seed
2 1/2 cup chicken broth
1 cup milk
432 grams pie crust - Two 9" pie crusts

Recipe Directions for Chicken Pot Pie

  1. Preheat oven to 375 degrees

  2. Add chicken, peas, carrots, celery, potatoes to pot and cover with chicken broth. Boil for 15 minutes and drain, reserving the broth. Set aside.

  3. In a saucepan at medium heat, melt butter and saute onions until translucent.

  4. Stir in flour, salt, pepper, celery seed, garlic powder. Adjust seasoning amounts to taste. Slowly stir in broth and milk. Simmer on medium-low until thick. Set aside.

  5. Place bottom pie crust in 9" pie pan. Brush bottom with whisked egg to ensure it doesn't become soggy while baking.

  6. Combine gravy and chicken/veggie mix and fill bottom crust. Place top crust on and seal. Bake for 45 minutes at 375. Allow it to rest for at least 10 minutes before serving.
