Recipe Ingredients for Chicken Pot Pie

3 stalks celery
1 (71g) raw onion
1 3/4 cup low sodium chicken broth
2/3 cup rice milk
1/3 cup whole wheat pastry flour
1 tbsp smart balance light margarine
2/3 cup frozen peas and carrots
2/3 cup frozen peas and carrots
2/3 cup frozen corn
2/3 cup frozen corn
8 reduced fat crescent rolls
1 (416g)chicken breast

Recipe Directions for Chicken Pot Pie

Chop celery and steam. Chop onion and saute in margarine, in a 2 quart sauce pan. Combine flour with chicken broth and add to cooked onion, margarine mixture. Add rice milk and cook on medium until thickened, set aside. Chop and cook chicken breast. Combine chicken, with sauce mixture and defrosted peas, carrots and corn. Spread 4 crescent rolls on bottom of small baking dish, add chicken and vegetable mixture. Top with remaining 4 crescent rolls. Bake at 375 degrees until crescent rolls are cooked and sauce mixture is bubbling. (I calculated this recipe to be 295 calories per serving).
