Made from scratch with carrots, peas & celery. I have a few tips: cover with foil for last 10 minutes of cooking to avoid burning crust boil chicken for approx 1 hour, cool and shred rather than cube. (my preference)

Recipe Ingredients for Chicken Pot Pie

1 pound skinless, boneless chicken breast - cubed
1 cup sliced carrots
1 cup frozen peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground sage
1 3/4 cup chicken broth
2/3 cup skim milk
2 9" unbaked pie crust

Recipe Directions for Chicken Pot Pie

  1. Preheat oven to 425

  2. In saucepan, combine chicken, carrots, peas and celery.

  3. Add water and cover. boil for 15 minutes.

  4. Remove from heat, dran and set aside

  5. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and sage. Slowly stir in chicken broth and milk. simmer over medium -low heat until thick. Remove from heat and set aside.

  6. Place chicken mixture in bottom on pie crust. pour hot liquid mixture over. add second pie crust & crimp sides. cut small slits on the top to allow steam to excape

  7. Bake in pre-heated oven for 30 to 35 minutes or until pastry is golden brown and filling is bubbly.

  8. Cool 10 minutes before serving.
