This is a chicken pot pie recipe specifically designed for freezing

Recipe Ingredients for Chicken Pot Pie - for freezing

1 1/2 lbs chicken breast
2 tablespoons Olive oil
5 1/2 cups low Sodium Chicken Broth
1 medium onion
3 carrots
1/4 cup celery
1/2 cup flour
1/4 cup whole milk
2 teaspoons thyme
2 tablespoons lemon juice
1 large egg
1 1/2 cups frozen peas
30 oz Pillsbury Pie Crust

Recipe Directions for Chicken Pot Pie - for freezing

  1. Pat chicken dry with paper towel or towel. Season with salt and pepper. heat 1 tplspn of oil in a large dutch oven over high heat until just smoking. Cook chicken until well browned about 2.5 minutes per side. Add broth and bring to a boil. Cover and simmer until chicken is cooked about 6 minutes.Transfer chicken to plate and Broth to bowl.

  2. Heat 1 tblspn of oil in now empty dutch oven over medium high heat and add onion, carrots, celery, and 1/4 teaspoon salt. Cook until lightly brown and softened (8-10 mins). reduce heat to medium and add flour and cook 1 minute. whisk in reserved broth and thyme and simmer until sauce thickens (10 mins)

  3. Using forks Shred chicken into bit sized pieces. Once the broth has been removed from the heat add chicken and lemon juice and season with salt and pepper to taste. Let filling cool until warm. Then wrap with plastic and transfer to refrigerator and chill about 1 hour. Once chilled add frozen peas.

  4. unroll pie crusts and combine the 4 pie crusts to make two. Cut out 6 pastry toppings. Divide filling into 6 2-cup size portioned containers. Cover with pastry and seal the edges with a fork. With scissors cut steam vents in pastry top.

  5. Store in freezer for up to 2 months - wrapped with 2 layers plastic wrap and 1 layer aluminum foil.

  6. to server - preheat oven to 400 degrees unwrap and place pies on a baking sheet. Bake covered with foil for 40 minutes and uncovered until crust is brown (about 35 mins)

  7. Let pies rest for 10 mins and serve
