Chicken Pot Pie with Dumpling Crust

Recipe Ingredients for Chicken Pot Pie with Dumpling Crust

1 1/2 cup chicken broth
1 tsp arrowroot
1 pepper
1 cup peas
2 carrot, diced
1/2 onion, diced
4 ounces cooked chicken thigh, diced
1/2 cup flour
1/4 cup skim milk
1/2 tsp baking powder
1 pinch salt

Recipe Directions for Chicken Pot Pie with Dumpling Crust

  1. Preheat oven to 350.

  2. In a small saucepan over medium low heat, bring chicken broth to a simmer. Add in the arrowroot and cook until thickened. Season with pepper to taste and set aside.

  3. Combine peas, carrots, onions, and chicken in a baking dish and cover with sauce. Bake for 20 minutes.

  4. Combine flour, skim milk, baking powder, and salt in a small bowl. Remove vegetable and sauce mixture from the oven and spoon batter over the top. Cover with a piece of foil coated with cooking spray. Return to the oven and bake for 15 minutes, or until dumplings are done through.
