Small portions of chicken pot pie, made in phyllo dough cups. Have 1 for a snack, or two to make a meal.

Recipe Ingredients for Chicken Pot Pie Cups

1 chicken breast, poached and diced
14 1/2 oz 98% Fat Free Cream of Chicken Soup
1 cup frozen mixed veggies
1 cup shredded reduced fat cheddar cheese
1 tbs Herbs de Provence
1 tsp onion powder
1 tsp garlic salt
10 Phyllo Pastry Sheets

Recipe Directions for Chicken Pot Pie Cups

  1. poach and dice chicken.

  2. combine all ingredients

  3. line muffin cups with folded phyllo dough, reserving a piece to fold over the top of the pot pie, once filled

  4. fill cups with pot pie filling

  5. bake for 15-20 mins at 350 deg.
