Recipe Ingredients for Chicken "Pot Pie" Casserole

6 small potatoes
2 lb cooked chicken, chopped
3 cups frozen peas and carrots
1 cup celery, chopped
1 cup onion, chopped
1 cup mushrooms, chopped
8 grams chicken boullion
2 tbsp cornstarch
1/2 tsp pepper
2 cups water
1 cup 2% milk
1/2 cup sour cream

Recipe Directions for Chicken "Pot Pie" Casserole

  1. place clean potatoes in microwave and cook till soft (baked potato consistency).

  2. saute onions and mushrooms until onions are transparent.

  3. add celery, chopped chicken, peas & carrots water, pepper and chicken boullion; cook on medium high heat until water reaches a boil.

  4. mix cornstarch with milk and stir in.

  5. continue cooking until desired consistency is reached.

  6. taste and adjust spices as desired.

  7. Serve over baked potatoes (or chop potatoes into the mixture if preferred).
