Easy "burritos" that can be made ahead and frozen. The filling is similar to chicken pot pie. Season to taste; I like to use Mrs. Dash garlic flavor, red and black pepper, and a pinch of thyme and curry powder. You can, of course, use fresh mushrooms. If pressed for time, rinse frozen broccoli to thaw it, and then chop.

Recipe Ingredients for Chicken Pot Pie Burritos

16 Old El Paso flour tortillas, burrito sized
1 tbsp canola oil
1 pound boneless skinless chicken breast, chopped
1 small onion, finely chopped
1 stalk celery, finely chopped
1 carrot, finely chopped
2 cups broccoli, finely chopped
1 cup canned mushrooms, finely chopped
2 cups chicken stock
1/2 cup lentils, raw
1 cup chicken stock
1/4 cup water
3 tablespoons Wondra flour

Recipe Directions for Chicken Pot Pie Burritos

  1. In a saucepan, bring 2 cups chicken stock to a boil and add lentils. Cook approximately 15-20 minutes, or until the lentils have expanded but are still firm. Remove from heat and let sit, covered. They will absorb liquid as they cool.

  2. Meanwhile, in a large skillet, brown chicken in oil until juices run clear. Drain if necessary and return to pan. Add onion, celery, carrot, broccoli, and mushrooms. Mix well, and let cook over medium heat until broccoli and carrots are tender.

  3. In a small dish, mix water and Wondra flour well. Add to one cup chicken stock and bring to a boil, stirring constantly for about one to two minutes, or until you have a very thick gravy. Remove from heat.

  4. When chicken and vegetables are done, remove from heat. Stir in the gravy and mix well. Let sit, uncovered, for five to ten minutes. Mixture will thicken. Note: Mixture needs to be very thick; thicken with a little water and more Wondra if it is still watery.

  5. Heat tortillas according to package directions. Spoon 1/4 cup of the chicken mixture into the middle of each tortilla and wrap. Wrap burrito in waxed paper OR paper towel, then wrap in aluminum foil.

  6. Can be frozen for up to three months or refrigerated for up to a week.

  7. To reheat one burrito: Remove aluminum foil. Microwave for 1 to 1.5 minutes. The waxed paper or paper towel will keep the burrito moist.
