A slight variation on my original recipe - this is just the filling, no topping.

Recipe Ingredients for Chicken Pot Pie #2

4 small red potatoes
2 cups Frozen Mixed Vegetables
1/2 cup corn
227 g cremini mushrooms
1 can Cream of Mushroom Soup, low fat
5 3/10 oz chicken breast, skinless boneless
1 tsp dried thyme
1/2 tsp dried sage
1 black pepper
2 clove garlic

Recipe Directions for Chicken Pot Pie #2

  1. Cook chicken until no longer pink in the center

  2. Add soup and chicken broth to a deep pan and bring to a simmer, add 1tbsp flour to thicken sauce (if needed)

  3. Chop up all vegetables and add to sauce

  4. Add frozen vegetables to sauce

  5. Add cooked chicken to sauce

  6. Cook until everything is at desired doneness

  7. Serve with biscuit if needed
