Recipe Ingredients for Chicken Posole (RS, M1, W2)

1 tablespoon olive oil
1 onion, thinly sliced
32 ounce low-sodium chicken broth
28 ounce diced tomatoes, drained
1/4 teaspoon crushed red pepper
2 cups chicken, shredded rotisserie meat
15 ounce hominy, rinsed
1 fruit lime, cut into wedges
1/4 tsp Kosher salt
1/4 tsp pepper

Recipe Directions for Chicken Posole (RS, M1, W2)

  1. Heat the oil in a large saucepan over medium heat. Add the onion and 1/4 teaspoon each salt and pepper and cook, stirring occasionally, until soft and beginning to brown, 10 to 12 minutes.

  2. Add the broth, tomatoes, and chili and bring to a boil. Stir in the chicken and hominy and simmer until heated through, 3 to 4 minutes.

  3. Serve with the Lime.
