Recipe Ingredients for Chicken Posole

2 red peppers
2 cups water
1 tablespoon cumin
1 tablespoon oil
1 1/2 pounds boneless chicken breast
4 garlic cloves
4 cups chicken broth
3/4 teaspoon of salt
30 ounce hominy

Recipe Directions for Chicken Posole

  1. Heat a cast-iron skillet. Place peppers in pan, flatten with spatula and cook 10 seconds on each side until black. Combine peppers in 2 cups boiling water until soft, let stand 10 minutes - put mixture in blender and process until smooth.

  2. Heat oil in dutch oven over medium-high heat. Add chicken, cook 5 minutes, browning on all sides. Do this in batches, you don't want to over crowd otherwise the meat will steam instead of brown.

  3. Remove chicken from pan - reduce heat to medium. Add garlic and cook for 1 minute. Stir in chicken, pureed peppers, cumin, broth, salt and hominy (undrained). Bring to simmer, cook 30 minutes or until chicken is tender.

  4. Toppings: sliced radishes, cilantro and lime slices
