Chicken with tomatoes in a lemon cream sauce

Recipe Ingredients for Chicken Pomodoro

32 oz raw Boneless Skinless Chicken Breasts
3 tbsp Olive Oil
2 medium raw Plum Tomato
1 cup Soup, Chicken Broth
1 lemon yields Lemon Juice
2 tbsp Heavy Cream
2 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Chicken Pomodoro

  1. Lightly coat chicken in flour and season with salt and pepper

  2. Brown chicken in olive oil until chicken is cooked through

  3. Remove chicken from pan

  4. Deglaise pan with chicken broth

  5. Add lemon juice and cream

  6. Return chicken to pan and cook in sauce for one minute on each side

  7. Remove chicken

  8. Add tomatoes and cook until tomatoes are heated through

  9. Pour sauce over tomatoes

  10. Garnish with green onions
