Recipe Ingredients for Chicken Pocket Pies filling

2 tbs unsalted butter
1/2 cup onions, chopped
1/3 cup carrots, chopped
1/2 tsp salt, coarse
2 tbs all-purpose flour
1 1/2 cups chicken broth
2 c chicken breasts, shredded
1/4 cup parmesan cheese, grated
1 egg

Recipe Directions for Chicken Pocket Pies filling

  1. Melt butter in skillet and add the veggies. Saute over med heat for 2-3 minutes. Stir in salt and flour and cook for another minute. Add the chicken broth and stir until thickened (few minutes). Stir in the cheese and chicken. Cool in the refrigerator.

  2. Preheat oven to 375 degrees.

  3. Roll out dough into two batches and cut 5- inch circles (I used a small plate as a guide). Place 1/4 cup of filling on half of each side. Moisten edges of circle with water and fold dough over to form half-circle. Crimp edges with a fork.

  4. Place pies on a buttered cookie sheet and chill for a few minutes. Prick tops with a fork. Beat egg with a tbs of water. Brush tops with egg wash. Bake for 20-25 mintues, until lightly browned. Cool 5 minutes before serving.
