This recipe has all the ingredients to make one medium chicken pizza and one calzone. The serving sizes are for 1/4 pizza and 1/4 calzone.

Recipe Ingredients for Chicken Pizza and Calzone

3 1/2 cups whole wheat flour
1 1/4 cups warm water
1 oz yeast
2 tbsp olive oil, divided
1 tbsp sugar
1/2 tsp salt
1 tsp rosemary
1 tsp basil
1 tsp Italian seasoning
1 tsp black pepper, coarse ground
2 cups pasta sauce
165 grams green pepper, chopped
175 grams shallots, chopped
300 grams boneless skinless chicken breasts
1 tsp cumin
1 tsp chili powder
200 grams mozzarella, grated
70 grams reduced fat cheddar

Recipe Directions for Chicken Pizza and Calzone

  1. Proof the yeast in the warm water.

  2. Combine flour, yeast water, 1 tbsp oil, sugar, salt, rosemary, basil, Italian seasoning, and pepper in a large mixing bowl.

  3. Mix thoroughly. When all ingredients are thoroughly combined, cover and set in a warm place for 45 mins to an hour.

  4. Saute chicken in cumin and chili powder.

  5. Saute shallots and green pepper in remaining tbsp of oil.

  6. When dough is double its size, divide in two, knead, and roll out.

  7. Lay one crust on a baking pan with cornmeal spread on it.

  8. Cover crust with half of sauce, half the vegetables, and half the cheese.

  9. Put all remaining ingredients except sauce on the calzone crust.

  10. Fold over calzone crust and crimp edges. Place on another baking tray with cornmeal.

  11. Bake both the pizza and the calzone at 450 degrees F for about 15 minutes, or until the crusts are lightly browned.

  12. Cool for 5 minutes, slice, and serve.
