Easy one pot recipe. Any vegetables or meats could be substituted or vegetable stock used in place of chicken stock.

Recipe Ingredients for Chicken Pilaf

500 grams chicken thighs
2 medium onions
2 medium carrots
1 cup celery
3 cloves garlic
3/10 cup pine nuts
1/2 cup dried currants
2 cups basmati rice
1 tsp turmeric
1000 ml chicken stock
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp olive oil
1 tbsp fresh coriander leaves

Recipe Directions for Chicken Pilaf

  1. Preheat oven to 190C

  2. Finely chop all vegetables and garlic

  3. Slice chicken finely across the grain

  4. Heat oil in large clame proof oven dish

  5. Add onions, carrots, celery, garlic and chicken and stir over heat until cooked through but not brown

  6. Add chicken stock, currants, pine nuts, turmeric, rice, salt and pepper and stir over heat until simmering

  7. Cover pot and place in oven

  8. Cook for 25 minutes in oven - do not remove lid at all during this time

  9. Remove from oven, fluff rice with a fork and sprinkle with coriander.
