Chicken Pie, adapted from several chicken pie recipes

Recipe Ingredients for Chicken Pie

2 tbsp olive oil
2/3 lb chicken breast, chopped finely
1/2 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
4 oz mushrooms, sliced
1 1/3 cup frozen peas, thawed completely
1 cup frozen corn, thawed completely
1 tbsp dried parsley
1 tsp dried thyme
1/2 tsp pepper
1 pie crust, pre-made, uncooked, standard type (the kind with a top)
1 can cream of chicken soup - Campbell's Healthy Request Condensed Soups

Recipe Directions for Chicken Pie

  1. Sautee the chicken in a little olive oil (1 T) until cooked through and slightly browned.

  2. In separate pan, sautee carrot, celery, and onion in the rest of the oil over medium heat until the onion is translucent and the carrot is tender. Midway through, add mushrooms and sautee together (since the mushrooms don't take long to cook). Add peas, corn, parsley, thyme, pepper, chicken and cream of chicken soup; stir until mixed thoroughly, and cook until just warmed through.

  3. Prepare pie crust according to package directions. Lightly grease 9x9 pie dish and line bottom with one crust. Fill with chicken and veggie mixture and cover the top with other pie crust. Poke vent holes in top crust.

  4. Bake at 375 for 45 minutes or as long as it takes for the crust to cook all the way through.

  5. You could brush the top with butter, or egg to encourage browning and crispness.
