Recipe Ingredients for Chicken Piccata

4 chicken breast, boneless, skinless halves
1/2 cup all-purpose flour
1 3/4 teaspoon salt
1/2 teaspoon fresh ground pepper
3 tablespoons vegetable oil
6 tablespoons unsalted butter
1/4 cup fresh lemon juice
1/2 cup chicken broth
1 garlic clove, minced
2 tablespoons capers, drained
1 tablespoon chopped fresh parsley

Recipe Directions for Chicken Piccata

Pound chicken breast until flattened to about 1/8 inch thick. Bowl combine flour, 1 1/2 tsp salt and pepper. Dredge chix in flour mixture, shaking to remove excess flour. Place 1 1/2 tbsp oil in lg skillet, med hi heat. When oil hot add 1 T of the butter and add 1/2 of the chix, cook for 1 minute until golden. Turn chix and cook until golden and cooked thru about 1 1/2 minutes. Remove chix and cover to keep warm. Repeat with rest of chix (adding oil and butter first). Remove chix from skillet and add lemon juice to skillet. Scrape with wooden spoon to remove any browned bits from bottom of pan. When reduced by 1/2 add chix broth, garlic, and capers. Cook 5 min until thickened. Add remaining 1/4 tsp salt, remaining 4 T butter and parsley. Cook stirring until heated thru and sauce has thickened about 1 minute. Do not boil. Remove from heat. Pour sauce over chicken, serve immediately.
