Chiken breast tenders in a lemon butter sauce.

Recipe Ingredients for Chicken Piccata

24 oz chicken breast tenders (8 tenders)
1/2 c flour
6 T unsalted butter
2 T olive oil
1/2 c lemon juice
1 c chicken stock
2 T capers, drained
2 cloves garlic, minced
1 salt and pepper to taste
1 Parsley (chopped fresh or dried) to taste

Recipe Directions for Chicken Piccata

  1. Season chiken with salt and pepper and dredge in flour.

  2. Heat half of the oil in a skillet over medium high heat (not smoking). Add 1 T butter.

  3. When butter melts, add 1/2 the chicken to the pan. Cook until golden on both sides and cooked through. Set aside and cover with foil.

  4. Repeat with the rest of the oil, 1 T butter, and the rest of the chicken.

  5. Reduce heat to medium and add the lemon juice to the pan. Allow to reduce by 1/2.

  6. Whisk in chicken stock and add garlic and capers.

  7. Allow to thicken (1-2 minutes) and reduce heat to low.

  8. Whisk in remaining butter and return chicken to pan.

  9. Sprinkle with parsley and let rest in pan for 10 minutes or until ready to serve.
