Recipe Ingredients for Chicken Piccata

6 ounce chicken breast halves, boneless, skinless
1/3 cup whole wheat flour
1/2 teaspoon pepper
1 dash salt
2 teaspoons olive oil
1/2 cup chicken broth, low sodium
1 cup mushrooms, fresh, sliced
1 medium onion, sliced, separated into rings
1/4 cup parsley, fresh, chopped
1/4 cup capers, drained and rinsed
1/4 cup lemon juice

Recipe Directions for Chicken Piccata

  1. Lightly pound each chicken half until about 1/2 inch larger in diameter.

  2. In a small bag, combine flour, salt and pepper; shake until well mixed. Place 1 chicken breast half in bag; shake to coat completely with flour mixture. Repeat with remaining chicken.

  3. Heat 1 teaspoon of the oil in large nonstick skillet over medium-high heat until hot. Cook 3 chicken pieces at a time until browned on both sides and no longer pink in center. Remove from skillet; cover to keep warm. Repeat with remaining 1 teaspoon oil and 3 chicken pieces. Remove from skillet; cover to keep warm.

  4. Add broth to same skillet; bring to boil. Add mushrooms and onion; cook 5 to 8 minutes or until liquid evaporates, stirring occasionally. Add parsley, capers, lemon juice and chicken pieces; cook until thoroughly heated.
