Chicken piccata served over whole wheat pasta

Recipe Ingredients for chicken piccata

1/3 cup all purpose flour
2 cups chicken broth
1 lb chicken breast
3 tsp olive oil
10 oz mushroom, sliced
3 cloves of garlic
1/2 cup white wine
2 tablespoon lemon juice
1/4 cup parsley
2 tablespoon capers
2 tablespoon butter
1 tsp kosher salt

Recipe Directions for chicken piccata

  1. whisk 5 teaspoons flour and broth in a small bowl until smooth.

  2. Place the remaining flour in a shallow dish.

  3. Season chicken with 1/4 teaspoon salt and pepper

  4. dredge both sides in the flour.

  5. Heat 2 teaspoons oil in a large nonstick skillet over medium heat.

  6. Add the chicken and cook until browned. Transfer to a plate; keep warm.

  7. Heat the remaining 1 teaspoon oil in the pan over medium-high heat. Add mushrooms and cook, stirring, until they release their juices and begin to brown, about 5 minutes.

  8. Transfer to a plate. Add garlic and wine to the pan and cook until reduced by half, 1 to 2 minutes.

  9. Stir in the reserved broth-flour mixture, lemon juice and the remaining 1/4 teaspoon salt.

  10. Bring to a simmer and cook, stirring, until the sauce is thickened, about 5 minutes.

  11. Stir in parsley, capers, butter and the reserved mushrooms.

  12. Measure out 1/2 cup of the mushroom sauce.

  13. Toss the pasta in the pan with the remaining sauce.

  14. Serve the pasta topped with the chicken and the reserved sauce.
