an easy, light, lemony chicken dish WW Pts= 7

Recipe Ingredients for Chicken Piccata

1 lb chicken breast fillets, boneless, skinless
1/4 c flour, all purpose
1/2 tsp salt
1/2 tsp pepper
2 T olive oil
3 T butter substitute, Smart Balance
1/3 c lemon juice
3 T capers

Recipe Directions for Chicken Piccata

  1. Dredge chicken in seasoned flour

  2. Heat 2 T olive oil and and melt 2 T butter (Smart Balance) in heavy skillet

  3. Saute chicken pieces until golden brown--about 4-5 minutes per side

  4. Remove chicken

  5. Add remaining butter, stir in lemon juice, andheat to a boil

  6. Pour over chicken and sprinkle with capers and fresh chopped parsley

  7. Serve with pasta and a fresh green salad
