Chicken Piccata with olives, no flour

Recipe Ingredients for Chicken Piccata with Nicoise Olives

1 1/2 lb. chicken breast
2 tablespoons olive oil
6 tablespoons butter
1/4 cup dry white wine
1 tablespoon lemon juice
1/4 cup nicoise olives

Recipe Directions for Chicken Piccata with Nicoise Olives

  1. Butterfly breasts and pound until 1/8 inch thick.

  2. Heat oil and 1 tablespoon butter over moderately high heat until foam subsides. Add chicken and cook, turning once, until golden and just cooked through about 2 minutes. Cook all chicken, 1 piece at a time adding more butter to the pan if needed.

  3. Pour off fat from the skillet. Off heat, add wine to skillet and return to heat and boil to deglaze, stirring and scaping brown bits for about 30 seconds. Stir in lemon juice and remaining 2 tablespoons of butter until butter is just incorporated. Remove from heat and stir in olives, salt and pepper to taste.
