A lower fat version made with sauteed chicken rather than fried.

Recipe Ingredients for Chicken Piccata - lower fat recipe

1 lb chicken breast
1/4 cup lemon juice
1 tbsp extra virgin olive oil
1/2 cup white wine
3 tbsp capers
2 tbsp flour
1 salt
1 pepper

Recipe Directions for Chicken Piccata - lower fat recipe

  1. Heat oil in pan over medium heat.

  2. Place chicken breasts in pan. Cook until browned.

  3. Remove chicken from pan.

  4. Cut chicken into 1/4" strips against the grain.

  5. Return chicken pieces to pan. Sautee until cooked through.

  6. Pour in lemon juice and white wine. Let simmer for five minutes.

  7. Gradually add flour while stirring mixture with a fork or whisk.

  8. Bring to a boil, reduce heat and let sit until sauce thickens.

  9. Pour over rice or pasta.
