A very nice dinner for 2, serve with steam Broccoli

Recipe Ingredients for chicken picatta

2 cups brown rice, cooked
16 oz boneless skinless chicken breasts
2 tablespoons Extra Virgin Olive oil
1 clove garlic, crushed
1 tablespoon chopped fresh chives
1 cup mushrooms, sliced baby portobello
1/2 cup Chicken Stock
1/2 teaspoon Sea Salt
1/2 teaspoon fresh ground pepper

Recipe Directions for chicken picatta

  1. cook rice according to package instructions.

  2. saute the chicken breasts in the olive oil, med-high heat, 5 minutes or so per side. Remove from pan, hold in warm toaster oven.

  3. Add all remaining ingrediant to the pan, simmer until liquid is reduced by half.

  4. plate the one breast on a bed of rice, cover with mushrooms and sauce
