Recipe Ingredients for Chicken Picata w/Capers, Artichoke Hearts & Rice

16 ounces boneless skinless chicken breast (4 4-ounce pieces)
1 dash Salt
1 dash ground black pepper
1/4 cup flour
1/2 teaspoon lemon zest, finely grated
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1 tablespoon olive oil
1/8 cup lemon juice, fresh preferred
1/2 cup white wine (dry)
1/2 cup fat free chicken broth
14 ounce canned artichoke hearts, quartered
1 cup baby portabello mushrooms, sliced
1/4 cup capers, drained
2 cups brown rice cooked
4 cups broccoli florets, fresh

Recipe Directions for Chicken Picata w/Capers, Artichoke Hearts & Rice

  1. Cook rice according to package directions.

  2. Place broccoli florets in steamer; cook for approximately 6-8 minutes, until fork tender but firm.

  3. While rice and broccoli are cooking, place chicken in zip-top bags and pound with a meat mallet or rolling pin until 1/4-inch thick.

  4. Remove chicken from bag and season all over with salt and black pepper.

  5. In a shallow dish (or plastic bag), combine flour, lemon zest, paprika, and garlic powder. Mix well. Add chicken and turn to coat.

  6. Remove chicken from flour mixture and shake off excess flour.

  7. Heat oil in a large skillet over medium-high heat. Add chicken and saute 2 minutes per side, until golden brown and cooked through.

  8. Drain oil from chicken.

  9. Add lemon juice, wine and chicken broth and simmer 5 minutes, until sauce thickens.

  10. Add artichoke hearts, mushrooms, and capers and simmer 1 minute to heat through.

  11. Serve 1 piece chicken with 1/2 rice, and top with sauce. Add 1 cup steamed broccoli on the side.
