Recipe Ingredients for Chicken pesto penne with asparagus

4 tbsp Extra Virgin Olive Oil
2 cup leaves, whole Basil, Fresh
16 oz Chicken
3 cup Whole Wheat Penne
25 spear, large (7-1/4" to 8-1/2") Asparagus
2 tomato Tomatoes, Red, Ripe
5 cloves, raw Garlic

Recipe Directions for Chicken pesto penne with asparagus

  1. Take 1/4 cup olive oil, 2 cup fresh basil, 2 garlic clove (mince). puree into a nice pesto sauce (you can also throw some fresh parsley and oregano in it too if you like)

  2. start water for penne

  3. coat bottom of a large frying pan with 1/4 of the pesto and add asparagus (sliced 1inch long) and 2-5 cloves (according to taste) sliced and saute for about 3-5 minutes

  4. once water for the whole wheat penne is at a boil, add penne to water and add cubed bite sized chicken breasts to the pan. add 1/4 more pesto sauce. cover pan to let asparagus steam. stir occasionally

  5. add fresh diced tomatoes to pan approx. 3 minutes before pasta is cooked and tender.

  6. once pasta is tender, strain and add to pasta and rest of pesto sauce (or to taste, not all of the pesto sauce is necessarily needed) and stir until evenly coated. salt and pepper to taste and enjoy!
