Recipe Ingredients for Chicken Pesto LInguine

1/2 pound Linguine Dry
8 ounce skinless, boneless chicken breast, cut into small pieces
1/2 tsp. salt, or to taste
1/2 tsp. fresh ground black pepper, or to taste
3 tablespoons olive oil
1 Garlic Cloves
4 ounces fresh mushrooms, halved
6 ounces roasted red peppers, drained and chopped
7 1/2 ounce marinated artichoke hearts, drained and quartered
3 ounces fresh spinach leaves
1/4 cup prepared basil pesto, or to taste
1 tablespoon freshly grated Parmesan cheese, divided (optional)

Recipe Directions for Chicken Pesto LInguine

  1. Start a large pot of lightly salted water to boil. Season the chicken with salt and pepper and set aside. Roughly chop all the veggies except the spinach leaves and set aside. In a large skillet, begin to heat a couple tablespoons of olive oil on low heat. In a medium skillet, begin to heat a couple tablespoons of olive oil on medium heat.

  2. When the water comes to a rolling boil, add pasta and cook until al dente (about 11 minutes) and drain. Add the chicken to the medium skillet and cook until lightly browned (about 10 minutes). Add all the veggies except the spinach to the large skillet and simmer just until the mushrooms begin to give off their juices (about 5-8 minutes), then stir in the spinach and simmer just until the leaves are wilted (about 2 minutes).

  3. Drain pasta and toss with the pesto; mix in the veggies and chicken. (For a vegetarian meal, plate a portion of the pasta and veggies before mixing in the chicken.) Serve grated parm at the table.
