Recipe Ingredients for Chicken and Peppers with Rice

2 tsp. olive oil
1 red pepper, diced
1/2 onion, diced
1 yellow pepper, diced
2 1/2 cups rice
1/8 tsp. sugar
2 tsp. corn starch
2 cups boneless skinless chicken breast
3 tbsp. soy sauce
1 clove garlic

Recipe Directions for Chicken and Peppers with Rice

  1. Slice or dice peppers and onions. Combine garlic, soy sauce, corn starch, sugar and diced chicken breasts.

  2. Add 1 tsp. olive oil to skillet and saute veggies and 8 oz. mushrooms. About 5 minutes. Remove from heat.

  3. Add chicken and marinade and sautee another five minutes. Return veggies to skillet and serve over rice.
