Chicken and peppers. Can be served with rice or over crumbled/broken tortilla chips.

Recipe Ingredients for Chicken and Peppers

1 small Peppers, Sweet, Red
1 serving sauteed onion
1 tsp Garlic
2 pepper, large (3-3/4" long, 3" dia)(186 g) Peppers, Sweet, Yellow
1 cup, cubes Avocados
1 Teaspoon Juice
3 pepper Peppers, Jalapeno
0.5 cup, crumbled Feta Cheese
1.5 breast, bone and skin removed Chicken, Breast, Meat Only

Recipe Directions for Chicken and Peppers

  1. Wash and broil all peppers

  2. Saute diced onion in 1tbsp extra virgin olive oil, adding in garlic towards the end

  3. Rub chicken with spicy chicken seasoning (cumin, paprika, pepper, salt, chile powder, cayenne pepper) and grill, then shred

  4. Once peppers are broiled, with nice bubbling/browning on top, remove from oven and put into a bowl covered with plastic wrap for 15 min.

  5. Peel and chop peppers

  6. Mix all chicken, peppers, onion/garlic in a casserole dish

  7. Squeeze lime juice over mixture

  8. Top with feta and avocado

  9. Bake at 350 for 20-25min
