A lightened up version of sausage and peppers. Big flavors, little fat.

Recipe Ingredients for Chicken w/ peppers and onions

8 oz. boneless skinless chicken breast
1/2 small onion, sliced
1/2 red bell pepper
1/4 cup banana peppers
5 mushrooms, sliced
1 tablespoon olive oil
2 tablespoons red wine vinegar
1 teaspoon oregano
3 garlic cloves, minced
1/4 teaspoon sage
1/4 teaspoon rosemary

Recipe Directions for Chicken w/ peppers and onions

  1. Add all ingredients to a glass baking dish, and toss thoroughly to distribute olive oil, vinegar and seasonings.

  2. Bake at 350 degrees untill chicken is done, about 35 minutes.
