Recipe Ingredients for Chicken and Peppers with Lime-Cilantro Sauce

2 teaspoons vegetable oil
16 oz chicken breast
1 medium onion, thinly sliced
2 red bell peppers, cored, seeded, and thinly sliced
1 yellow bell pepper, cored, seeded, and thinly sliced
1 jalapeno pepper, cored, seeded, and thinly sliced (optional)
1/2 cup low-sodium chicken broth
1 teaspoon grated lime zest
2 teaspoons cornstarch
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice

Recipe Directions for Chicken and Peppers with Lime-Cilantro Sauce

  1. Heat the oil in a large nonstick skillet over medium-high heat. Lightly salt and pepper the chicken and cook for 4 minutes, each side. Transfer to a plate and keep warm.

  2. Add the onion, bell peppers, and jalapeno, if desired, and cook, stirring frequently, until crisp-tender, 6 minutes. Return the chicken to the skillet.

  3. In a small bowl, whisk together the broth, lime zest, and cornstarch. Add to the skillet, cover, and reduce the heat to medium low. Cook until the sauce thickens and the chicken is just cooked through, 3 minutes. Stir in the cilantro and lime juice and serve immediately.
