Low calorie chicken casserole with peppers and a light sour cream sauce

Recipe Ingredients for Chicken and Peppers Casserole

12 ounce skinless chicken breasts
1/2 medium red bell pepper (sliced)
1/2 medium yellow bell pepper (sliced)
1/2 medium green bell pepper (sliced)
1 medium onion (sliced)
1 cup of chicken broth
4 tablespoons sour cream
8 sprays of pam
1/4 teaspoon of salt

Recipe Directions for Chicken and Peppers Casserole

  1. Preheat oven to 400 degrees

  2. Season breasts with the salt

  3. Heat a skillet over medium high heat.

  4. Spray skillet with Pam and add chicken breasts. Cook chicken until golden brown on both sides. Remove from heat.

  5. Cut chicken in small pieces and put in an oven safe casserole.

  6. Spray more pam on the same skillet and add the onions and peppers. Cook until golden brown.

  7. Add peppers and onions to the chicken in the casserole.

  8. Add chicken broth and sour cream. Mix well.

  9. Cover casserole and bake for 30 minutes.

  10. Enjoy with pasta or rice.
